
Rebel's Curried Egg Mayo

Ingredients:

4 large eggs
-
2 tbsp mayonnaise (or Greek yogurt for a lighter option)

1 tsp Spice Squad Gunpowder Spice Mix
-
1/4 tsp mustard (optional, for tang)

Salt to taste

1 tsp lemon juice
-
1 tbsp finely chopped red onion or chives (optional)

Toast, wraps, or lettuce leaves for serving
Instructions:

Boil the eggs:
Add eggs to a saucepan and cover with water. Bring to a boil, then reduce heat to 9–10 minutes. Drain and peel in cold water. -
Mash & mix:
In a bowl, mash the eggs with a fork. Add mayonnaise, Spice Squad Gunpowder, mustard, salt, lemon juice, and onion/chives if using. Mix until creamy and well combined. -
Serve:
Pile on toasty bread, sandwich between soft bread, spoon into wraps, or scoop into crunchy lettuce cups for a low-carb option.
