Rebel's Curried Egg Mayo

Ingredients:

  • 4 large eggs

  • 2 tbsp mayonnaise (or Greek yogurt for a lighter option)

  • 1 tsp Spice Squad Gunpowder Spice Mix

  • 1/4 tsp mustard (optional, for tang)

  • Salt to taste

  • 1 tsp lemon juice

  • 1 tbsp finely chopped red onion or chives (optional)

  • Toast, wraps, or lettuce leaves for serving


Instructions:

  1. Boil the eggs:
    Add eggs to a saucepan and cover with water. Bring to a boil, then reduce heat to 9–10 minutes. Drain and peel in cold water.

  2. Mash & mix:
    In a bowl, mash the eggs with a fork. Add mayonnaise, Spice Squad Gunpowder, mustard, salt, lemon juice, and onion/chives if using. Mix until creamy and well combined.

  3. Serve:
    Pile on toasty bread, sandwich between soft bread, spoon into wraps, or scoop into crunchy lettuce cups for a low-carb option.
